Pork with oregano tomato sauce
When made with fresh oregano then the pork with oregano tomato sauce will taste so much better compared to using dried oregano.
This recipe is easy to make:

Fresh oregano is very easy to grow at home. If you’ve never tried the fresh herb before you will be pleasantly surprised by the extra flavour.
How to make pork with oregano tomato sauce
Ingredients:
- 4 Lean pork medallions
- 50 g Butter
- 1 Onion – peeled and chopped
- 1/2 Red Pepper
- 1 Tablespoon chopped fresh oregano
- 4 Garlic cloves – crushed into small pieces
- 1 Tablespoon Tomato Puree
- 3 Fresh tomatoes – cut into pieces
- 6 Sundried tomatoes – cut into pieces
- 100 ml White wine
- Salt & pepper to taste
Equipment
- Large frying pan
- Chef’s knife & chopping board
Instructions
- Sprinkle the pork medallions with pepper
- Add the butter into the heated frying pan and fry the pork for about 8 minutes, until brown and cooked.
- Remove from the frying pan and place on a plate, cover with aluminium foil to keep warm.
- Add the chopped onion, pepper and garlic into the frying pan (with the leftover butter) and fry for about 1 min until soft,
- Add the fresh and sundried tomatoes pieces, tomato puree, oregano and white wine and fry for about 5 minutes.
- Add salt and pepper if required.
- Divide the pork onto 4 plates and pour over the sauce.
How to serve pork with oregano tomato sauce
Great with sauteed potatoes or potato croquettes and vegetables.
