Pork with oregano tomato sauce
Equipment
- 1 Large frying plan
- 1 Chef Knife
Ingredients
- 4 Lean pork medallions
- 50 g Butter
- 1 Onion Cut into small pieces
- 1/2 Red pepper
- 1 tbsp Fresh Oregano
- 4 cloves Garlic
- 1 tbsp Tomato puree
- 3 Fresh tomatoes Cut into small pieces
- 6 Sundried tomatoes Cut into small pieces
- 100 ml White wine
- Salt and Pepper
Instructions
- Fry the porkSprinkle the pork medallions with pepperAdd the butter into the heated frying pan and fry the pork for about 8 minutes, until brown and cooked.Remove from the frying pan and place on a plate, cover with aluminium foil to keep warm.
- Make the sauceAdd the chopped onion, pepper and garlic into the frying pan (with the leftover butter) and fry for about 1 min until soft,Add the fresh and sundried tomatoes pieces, tomato puree, oregano and white wine and fry for about 5 minutes.Add salt and pepper if required.
- Serve and enjoyDivide the pork onto 4 plates and pour over the sauce.

1. Fresh oregano
Dried oregano is available in most shops, but you will notice a real difference in flavour when you use fresh oregano.
It is very easy to grow at home, and you can use it in many, many recipes.
Like all herbs the fresh varieties are simply much better.

2. The tomatoes you use
There are very many different types and varieties of tomatoes available.
For example the Roma tomatoes (pictured) are not only great for cooking but also great for making oven dried tomatoes.
