Fry the porkSprinkle the pork medallions with pepperAdd the butter into the heated frying pan and fry the pork for about 8 minutes, until brown and cooked.Remove from the frying pan and place on a plate, cover with aluminium foil to keep warm.
Make the sauceAdd the chopped onion, pepper and garlic into the frying pan (with the leftover butter) and fry for about 1 min until soft,Add the fresh and sundried tomatoes pieces, tomato puree, oregano and white wine and fry for about 5 minutes.Add salt and pepper if required.
Serve and enjoyDivide the pork onto 4 plates and pour over the sauce.
