Healthy air fryer baby potatoes
This is a very easy to make side dish that is also very healthy.
It contains 2 key items:
- The air fryer baby potatoes
- The flavoursome healthy dressing.
You can either simply make the crispy baby potatoes to eat on their own, but it’s the dressing that will give it it’s unique lovely flavour.
How to make healthy air fryer baby potatoes
Ingredients:
For the air fryer baby potatoes:
- 500 g Baby potatoes – washed, dried and cut in half
- 2 tsp Olive oil
- 2 tbsp Chopped fresh rosemary
- 2 pods garlic – crushed
- 1 tsp salt
- 1 tsp black pepper
For the healthy dressing:
- 2 tbsp Chopped fresh parsley
- 1 tbsp Olive oil
- 1 tbsp White wine vinegar
- 1 tbsp Maple Syrup
- 1 tbsp Dijon mustard
- Salt & pepper
Equipment
- 1 Air fryer
Instructions
1 – Make the air fryer baby potatoes:
- Wash and dry the potatoes and cut into half
- In a mixing bowl add the olive oil and make sure all the potatoes are covered.
- Add the chopped fresh rosemary, crushed garlic, salt & pepper
- Carefully mix the bowl so that all the potatoes are covered.
- Add into the air fryer and fry for 15 to 20 minutes at 200 Degrees Celsius.
- Very important : make sure they are only 1 layer high (if you need more then cook them in batches)
- Half way (after 7 to 10 minutes) shake the basket.
2 – Make the healthy dressing.
- Combine the olive oil, white wine vinegar, maple syrup, Dijon mustard and the salt & pepper in a bowl.
- Add the chopped fresh parsley and mix
3 – Finalise the Healthy air fryer baby potatoes
- Remove the baby potatoes from the air fryer and put in a large bowl.
- Add the healthy dressing and mix well.
Lovely as a side dish with items like roast chicken, salmon, etc.

Why use as a side dish & not a main meal?
The downside is that it has very little protein.
If you want to eat a healthy balanced diet then combine it with another source of protein (such as chicken, salmon, etc.)
In addition it’s also a good idea to also add vegetables, like green beans, broccoli, carrots, etc.
