Pork stir fry with pineapple
If you use fresh mint & coriander this will give the pork stir fry with pineapple a lovely flavour.
The stir fry only takes about 20 minutes to make and ideal when:
- Combined with plain white rice
- Or rice vermicelli (as in the picture)
Fresh mint & coriander is great for making stir fry dishes.The recipe below uses tinned pineapple, only because it’s very easy to use. You can also use fresh pineapple.

How to make Pork stir fry with pineapple
Ingredients:
- 4 Lean Pork Loin Steaks
- 4 Pineapple rings (from a tin)
- 1 Lime
- 1 Onion
- 4 Garlic cloves
- 1 Tbsp Chopped Mint
- 1 Tbsp Chopped Coriander (Cilantro)
- 1 Red chilli pepper
- 2 Tbsp Soy sauce
- 2 Tbsp Olive oil
- Salt & Pepper to taste
Equipment
- Wok
- Chef’s knife
Instructions
- Step 1 – Prepare the ingredients
- Drain the pineapple, Chop into pieces and put aside
- Squeeze the lime and put the juice aside
- Remove the seeds from the chilli pepper and cut into small pieces
- Chop the mint and coriander into small pieces
- Cut the onion and garlic into small pieces
- Cut the pork into thin slices
- Step 2 – Fry the ingredients
- Add the olive oil into the wok, add the pork and fry until golden and brown
- Remove and put aside
- Add the onion, garlic and chopped pepper and fry until soft
- Step 3 – Finalise the stir fry
- Add the pork into the wok
- Add the lime juice, pineapple chunks, chopped mint & coriander and soy sauce
- Flavour with salt & pepper
- Stir fry for a couple of minutes
- Step 4 – Serve with white rice or rice vermicelli
How to use the pork stir fry with pineapple

When you are cooking fresh herbs tend to make a real difference to the results. Herbs are really easy to grow at home and many of them grow really fast.
It’s not very difficult to grow your own at home – either outdoors or even indoors (in your kitchen, spare bedroom, garage, etc.
