Strawberries in red wine
A key recipe in Monaco the strawberries in red wine are lovely either:
- Served on their own
- Or with vanilla ice cream
Fraises de bois au vin rouge
The original recipe uses wild strawberries, which have more flavour then shop bought ones.
But this recipe works with any type of strawberry, is easy to make and a great treat or dessert.
Monaco cuisine
I originally found this recipe when researching recipes used in Monaco (as part of the country recipe challenge) and couldn’t wait to try it.
Meals in Monaco (not surprisingly) are very much influenced by both French and Italian cooking. And the country has many lovely original recipes, ranging from..
- Stuffed fritters (‘Barbagiuan’) which contain different types of contents, such as cheese, eggs, etc.
- Bouillabaisse – a fish stew containing different types of fish
- Fougasse – a small sweet flatbread containing oranges, raisons, etc. (Thank you Wikipedia)
- And many, many more
The Strawberries.
Strawberries are very easy to grow in your garden or allotment. They like sunshine but will grow great in a pot.
There are different types of strawberries – the key is to grow the one that will suit you.
The original recipe ‘Fraises de bois au vin rouge’ used wild strawberries, which tend to be small and very sweet. (Alpine strawberries).
However summer-fruiting strawberries will probably produce a larger harvest.
How to make strawberries in red wine
Ingredients:
- 500 g Strawberries
- 200 g Sugar
- 1 Cinnamon Stick
- 1 Lemon
- 1.5 tsp Vanilla Essence
- 400 ml Red wine
Equipment
- 1 Sauceplan
- 1 Large bowl
Instructions
1 – Make the wine syrup:
- Bring the wine to simmer in a saucepan
- Stir in the sugar and continue to simmer for 2 to 3 minutes
- Add the cinnamon stick and vanilla essence and simmer on low heat for 10 minutes. Stirring regularly
- Let it cool down and chill in the fridge.
2 – Prepare the strawberries.
- Wash and half the strawberries and put in a large bowl.
- Squeeze the lemon and pour the juice over the strawberries.
3 – Finalise the strawberries with red wine
- Pour the red wine syrup over the strawberries.
- And serve.
How to serve
There are lots of ways to serve the strawberries in red wine:
1. In a wine glass
The easiest way is to simply add some of the strawberries into a large wine glass and then pour some of the wine on top. (Providing a small teaspoon will help)
2. On ice cream
The other option is to put them on top of vanilla ice cream. The combinations of strawberries, ice cream and wine works really well.

- 1 Saucepan
- 1 Large Bowl
