Fresh Mint Pesto

Very easy to make with a lovely sweet and unique flavour.
Great as a dip, added to pasta or with samosas or even chicken nuggets.
This is one of my fresh mint recipes.

Equipment

  • 1 Food processor
  • 1 Chef Knife optional

Ingredients

  • 40 g Fresh Mint Leaves
  • 40 g Pine nuts
  • 3 tbsp Sugar
  • 2 tbsp Lemon Juice
  • 1 tsp Balsamic syrup
  • 60 ml Virgin olive oil

Instructions

Get the mint ready

  • Pick the mint and remove the leaves from the stem
  • Chop the leaves into smaller bits (optionally, I just found it easier to blend)

Add into Blender

  • Add the mint leaves into the blender
  • Add the other ingredients

Blend until smooth

  • Blend until smooth

Chill

  • Put in the fridge for 1 to 2 hours before using.
