Orange thyme sauce for chicken

Ideal for topping on chicken or other meats, such as burgers. Especially great for barbequed meats

Equipment

  • 1 Saucepan
  • 1 Chef Knife
  • 1 measuring jug

Ingredients

  • 4 tbsp Fresh Thyme leaves
  • 180 ml Orange juice
  • 1 Onion
  • 250 ml Chicken stock
  • 150 ml Creme Fraiche
  • 1 tbsp Butter
  • 1 tbsp Flour Optional
  • Salt and Pepper

Instructions

  • Fry the butter until melted in a saucepan.
  • Add the chopped onion and fry until soft and golden
  • Add the chopped thyme leaves, chicken stock and orange juice
  • Bring to the boil and simmer until it has reduced to half
  • Then add the creme fraiche and salt & pepper to taste
  • Stir until smooth

Optional
If the sauce is to thin and runny then add flour to thicken it. Simply blend 1 or 2 tbsp plain flour in a jug with the same amount of water and stir until no longer lumpy. Then add to the sauce and simmer for 5 minutes.
