Add the chopped onion and fry until soft and golden
Add the chopped thyme leaves, chicken stock and orange juice
Bring to the boil and simmer until it has reduced to half
Then add the creme fraiche and salt & pepper to taste
Stir until smooth

Notes
OptionalIf the sauce is to thin and runny then add flour to thicken it. Simply blend 1 or 2 tbsp plain flour in a jug with the same amount of water and stir until no longer lumpy. Then add to the sauce and simmer for 5 minutes.
