3tbspFresh Mint Leaves

3tspLemon juice

Instructions
Get the ingredients readyStrip the mint leaves from the stalk and put on chopping boardChop the leaves into small pieces.Peel and core the apples and cut into large chunks.
Cook the applesPlace apples, sugar and 1/4 cup water in a small saucepanCook on low heat, gently stirring until the sugar dissolvesThen simmer for 5 – 6 minutes or until apples are soft but still holding shape.
Mash the applesLet the apples cool for about 5 minutesPlace apple mixture in the bowl of a food processorAdd the lemon juice and mintProcess until pureed

Notes
The length of time you need to simmer the apples will depend on how small you cut them and also on the type of apples. In the video I used Granny Smith apples with very large chunks and has to simmer for 15 minutes.Just simmer until they become soft.
