Sausage tomato sauce

Lovely filling meal full of flavour great with mashed potatoes or pasta.

Equipment

  • 1 Large frying pan or saucepan
  • 1 Chef Knife

Ingredients

  • 6 Bratwurst or similar sausage
  • 2 sprigs Fresh Thyme
  • 1 Onion
  • 4 Fresh tomatoes
  • 4 cloves Garlic
  • 1 tsp Chilli powder
  • 1 cube Chicken stock
  • 1 can Red Kidney Beans
  • 1 tbsp Extra virgin olive oil
  • Salt and Pepper

Instructions

  • Prepare the ingredients
    - Remove the thyme leaves and chop into small bits.
    - Cut the tomatoes into large bits. Peel the onion & garlic and chop into small bits.
  • Brown the sausage
    - Heat the olive oil in the frying pan, add the Bratwurst and fry until brown on all sides.
    - Remove from the pan and keep safe.
  • Fry & simmer the ingredients
    - Add the onion and garlic into the same pan and fry until soft. Then add the chilli powder and stir.
    - Add the sausages back into the pan. Add the chopped tomatoes and 200 ml water.
    - Crumble the chicken stock on top bring to the boil and then simmer for 15 to 20 minutes.
  • Finalise the sauce
    - Drain the kidney beans and then add the beans as well as the thyme into the pan.
    - Leave for a few minutes to warm up and then serve.
