Pork with oregano tomato sauce

Very easy to make the blend of fresh and sundried tomatoes add real flavour. In addition the recipe helps keep the pork moist and tasty

Equipment

  • 1 Large frying plan
  • 1 Chef Knife

Ingredients

  • 4 Lean pork medallions
  • 50 g Butter
  • 1 Onion Cut into small pieces
  • 1/2 Red pepper
  • 1 tbsp Oregano
  • 4 cloves Garlic
  • 1 tbsp Tomato puree
  • 3 Fresh tomatoes Cut into small pieces
  • 6 Sundried tomatoes Cut into small pieces
  • 100 ml White wine
  • Salt and Pepper

Instructions

  • Fry the pork
    Sprinkle the pork medallions with pepper
    Add the butter into the heated frying pan and fry the pork for about 8 minutes, until brown and cooked.
    Remove from the frying pan and place on a plate, cover with aluminium foil to keep warm.
  • Make the sauce
    Add the chopped onion, pepper and garlic into the frying pan (with the leftover butter) and fry for about 1 min until soft,
    Add the fresh and sundried tomatoes pieces, tomato puree, oregano and white wine and fry for about 5 minutes.
    Add salt and pepper if required.
  • Serve and enjoy
    Divide the pork onto 4 plates and pour over the sauce.
