Pork Pear Tray Bake

Equipment

  • 1 Baking tray
  • 1 Baking paper
  • 1 Chef Knife

Ingredients

  • 4 Lean pork medallions
  • 4 Red Onions
  • 4 Conference Pears
  • 1 tbsp Runny Honey
  • 1 medium Celeriac
  • 4 cloves Garlic
  • 2 tbsp Dijon Mustard
  • 2 tbsp Fresh Thyme
  • 1 tsp Mild paprika powder
  • 2 tbsp Olive oil
  • Salt and Pepper

Instructions

  • Prepare the ingredients.
    - Pick the thyme, remove the leaves from the stem and chop into small bits
    - Peel & chop the red onion
    - Peel & chop the garlic
    - Peel the celeriac and slice into thin strips
    - Cut the pears into quarters and remove the core
  • Bake the pears, celeriac and onions:
    - Preheat the oven to 200 degrees celscius,
    - Line a baking tray with baking paper.
    - Spread the onion, celeriac and pears onto the baking tray,
    - Cover with olive oil, the chopped thyme, some pepper and (optionally) some salt and put in the oven for 20 mins
  • Prepare & marinate the pork chops
    Mix the crushed garlic, mustard, honey and paprika powder
    Cover the pork chops with the seasoning
  • Finalise the dish:
    Remove the baking tray from the oven, turn over the contents and add the pork chops.
    Cook for 5 to 10 minutes until the chops are cooked
