Prepare ingredients- Pick the after eight mint and remove the leaves from the stem- Pour the water and sugar in a sauce pan.
Make the base syrup- Heat to boiling, stirring to dissolve the sugar
Make the after eight mint syrup- Add the mint leaves and simmer for 15 to 20 minutes until it thickens. without stirring.- Optionally add food colouring if you like.- Pour into a bowl, using a sieve to strain the leaves and let cool
