Ingredients

  • 250 ml Water
  • 64 g sugar
  • 1 cup Fresh after eight mint leaves
  • Food colouring (Optional)

Instructions

  • Prepare ingredients
    - Pick the after eight mint and remove the leaves from the stem
    - Pour the water and sugar in a sauce pan.
  • Make the base syrup
    - Heat to boiling, stirring to dissolve the sugar
  • Make the after eight mint syrup
    - Add the mint leaves and simmer for 15 to 20 minutes until it thickens. without stirring.
    - Optionally add food colouring if you like.
    -  Pour into a bowl, using a sieve to strain the leaves and let cool
