Pan fried potato with oregano
Equipment
- 1 Large frying plan
- 1 Saucepan
Ingredients
- 375 g Potatoes
- 2 cloves Garlic
- 2 tbsp Fresh Oregano Chopped leaves
- 1.5 tbsp Lemon Juice 1/2 a lemon
- 1 tbsp Olive oil or butter – see note
- Salt and Pepper
Instructions
Prepare the ingredients
- Chop the potatoes into similar sized bits.
- And then put them into a saucepan, add cold water (and salt) and bring to the boil. When boiling leave them for 5 to 10 minutes (depending on size). Remove the potatoes and put aside.
- Peel & chop the oregano and crush the garlic. Squeeze the lemon juice.
Fry the potatoes
- Add the olive oil (or butter) into the frying pan and add & fry the potatoes.
- When frying sprinkle the garlic, oregano, salt & pepper on top.
- Finally when crispy add the lemon juice. Taste and add some more lemon juice if required.
- Remove from frying pan and enjoy.

How to use pan fried potato with oregano.
It’s a lovely side dish, with the flavour great with fish, chicken or any meat.
3 Items to consider for the pan fried potato with oregano:
Item 1 – Type of potato used
In the original recipe the potato used is a white potato (often Morris Piper), but in the video & pictures I used baby potatoes.
Potatoes do have a different taste. If you use ‘normal’ potatoes then simply peel and cut them into smaller bits. Or alternatively with baby potatoes simply cut them in half.
Item 2 – Olive oil or Butter
According to a study by the National Library of Medicine olive oil is far healthier than butter, especially in the impact on your cardiovascular system.
Which is why for health reasons using olive oil is a far better option to use when making pan fried potato with oregano than using butter.
On the other hand I did use butter in the video simply because of a personal preference. I just like the impact on the flavour of pan fried potatoes.
Item 3 – Fresh or Dried Oregano
Oregano is one of the ‘super’ herbs with a long list of health benefits. For example the webmd site mentions its anti-inflammatory & antioxidant, properties. Oregano tea is used to help with headaches, cough, flu, backpain, etc, etc.
However it is very important to realise that many benefits (& flavour) are reduced during the drying process, which is why growing fresh oregano is such a good idea.
Very easy to grow at home
It’s not very difficult to grow your own at home – even indoors (in your kitchen, spare bedroom, garage, etc.
The picture on the right shows oregano which was grown in my kitchen, and simply moved outdoors into the garden.
Oregano will grow very fast and you will be able to use it in your recipes on a regular basis.
