French tarragon bacon baby potatoes
Equipment
- 1 Large frying plan
- 1 Saucepan
Ingredients
- 365 g Baby potatoes (Or new potatoes)
- 1 Medium Onion
- 100 g Smoked bacon lardons
- 2 tbsp Chopped French Tarragon
- 1 tbsp Butter (or olive oil)
- Salt and Pepper
Instructions
Prepare the ingredients
- Chop the baby potatoes into similar sized bits. And then boil them in salted water in a saucepan for 5 minutes. Remove the potatoes and put aside.
- Peel & chop the French tarragon. Chop the onion into small bits.
Prepare the potatoes & bacon
- Fry the bacon lardons in a frying pan. When crispy remove but leave any liquid behind.
- Then add the chopped onion and fry. Remove the onion, adding them to the saved bacon.
- Wipe the frying pan clean with a bit of kitchen roll and then add the butter and potatoes. Fry the potatoes until nice golden and crispy. (about 10 minutes)
- Then add the onion and bacon back into the saucepan, mix and heat through.
Finalise the French tarragon bacon baby potatoes
- Finally add the chopped French tarragon and mix well.
- Remove from frying pan and enjoy.

How to use French tarragon bacon baby potatoes.
The French tarragon bacon baby potatoes are a lovely side dish with any meal.
For example the picture on the right shows the crispy bacon baby potatoes combined with air fried chicken breasts and Spinach a la creme.
On the other hand you could always simply use them as a very easy snack.

French Tarragon
In the recipe I used French tarragon.
There are 3 different types of tarragon – French, Mexican and Russian.
French Tarragon has much more taste then the other 2 varieties. For example if you use Russian tarragon you will need to use at least 4 times as much for the same flavour..
French tarragon is very easy to grow at home.
For example the picture on the right shows French Tarragon growing on a bedroom window sill in a pot, and will grow quite quickly.
It’s quite small in the picture simply because I tend to cut it back often for use in recipes.
