Tarragon chicken breast
Equipment
- 1 Large frying plan
- 1 Knife and chopping board
Ingredients
- 2 Chicken breasts
- 100 g White grapes
- 70 ml White wine
- 90 ml double cream
- 2 tbsp Chopped French Tarragon
- 1 Onion Chopped into small pieces
- 4 cloves Garlic Crushed
- 1 tsp Dijon Mustard
- 2 tbsp Olive oil
- Salt and Pepper
Instructions
Prepare the chicken
- Cover the chicken with salt & pepper, add olive oil into the saucepan and fry the chicken until it’s well cooked.2 Chicken breasts, 2 tbsp Olive oil, Salt and Pepper
- Remove the chicken from the frying pan and keep warm.
Make the sauce
- Add then add the garlic and onion into the frying pan and fry for 30 seconds..1 Onion, 4 cloves Garlic
- Add the wine and cook for another 30 seconds70 ml White wine
- Then add the cream, mustard, salt & pepper and simmer on a low heat until the sauce has thickened.90 ml double cream
Finalise the meal
- Put the chicken breast back in the frying pan and then add the chopped tarragon and grapes. Gently stirring simmer for another 30 seconds.2 tbsp Chopped French Tarragon, 1 tsp Dijon Mustard, 100 g White grapes
- Remove the chicken breasts and pour over the sauce.

3 key items to making the tarragon chicken breast recipe.
1. Select the right type of tarragon.
When cooking there are 3 different types of tarragon you can use – French, Mexican and Russian.
French Tarragon has much more taste then the other 2 varieties. For example if you use Russian tarragon you will need to use at least 4 times as much for the same flavour..
French tarragon is very easy to grow at home.
For example the picture on the right shows French Tarragon growing on a bedroom window sill in a pot, and will grow quite quickly.
It’s quite small in the picture simply because I tend to cut it back often for use in recipes.

2. Use the right type of white wine
The white wine adds lovely flavour but do take care in which one you use. In the recipe I used dry white wine (Sauvignon Blanc) but the quality makes a difference. And of course you might end up drinking the rest of the bottle 🙂
3. The type of garlic you use
If you visit some restaurants in France then you will notice they use a different type of garlic.
For example the picture shows ‘regular’ garlic (on the left) next to Germidour garlic on the right.
The beauty of Germidour garlic is that it has a much more mild and sweet garlic flavour than regular garlic.
When making this recipe make sure you add enough garlic as it does affect the taste.

Tarragon is a very healthy herb to add to your recipes. According to healthline it has 8 key benefits. For example it is great for helping you sleep, decrease blood sugar levels, help with osteoarthritis pain, etc. etc..
The recipe used double cream but if you are lactose intolerant then coconut double cream will work just as well
